"This naan is ready in 40 minutes! I like this recipe better than Recipe #41503. For best results, follow directions carefully. They seem long but aren't, I am just describing what I saw on TV exactly. UPDATE: Made this with sour cream instead of yogurt. Much, much better!!"

directions

  • If the yogurt is cold, heat it for 15 seconds in the microwave.
  • Add ingredients to your bread machine according to the manufacturer's directions.
  • After 5 minutes, check your dough (see NOTE).
  • After another 5 minutes (10 minutes total in the machine) take the dough out and divide into 8 pieces. Turn each piece in flour, cover, and allow to rest on a tray for 20 minutes.
  • Meanwhile, heat your oven to 500°F.
  • If you have a pizza stone, allow it to heat in the oven, otherwise, put heat-resistent metal cooling racks in the oven. Baking sheets do not work very well.
  • With your fingers, flatten each piece of dough into a tear-drop shape, 1/2 inch thick.
  • Moisten hands, then turn naan briefly in your hands to moisten it, and place it on the stone/rack; bake for about 4 minutes.
  • Brown tops using the broiler.
  • Wrap naan in a towel while you make the rest.
  • NOTE: Dough should be somewhat sticky, and you might get a small amount stuck to your finger. It shouldn't stick to the pan at all. If it isn't sticky enough, add 1 T water. If it sticks to the pan, add 1 T flour, till you reach the correct consistency.

  1. Made fantastic naan that was easy and authentic! It puffed up well in the oven and tasted even better fried on a non stick pan at a very hot temperature. I substituted 2 tsp sugar for the honey.

  2. Best naan we've made yet! Used sour cream as suggested. I was a little skeptical of the technique but it worked great. My dough felt very workable and not very sticky after 5 mins and I left it as is. Softest naan we've made. Made it in a cast iron with coconut oil so I could get it very hot. I'm sure it will be wonderful on the grill once it gets warm enough to cook outside. Thanks for the keeper!

  5. Nice recipe for naan bread. I made it half whole wheat and half all purpose, used the full dough cycle on my bread machine as I needed the time to work on other dishes for dinner. I used milk instead of water, omitted the honey and added 1/2 tsp of garlic powder as that's my favourite naan flavour. I used a baking sheet and it worked great, the naan rose a bit much so I had to squish it back down lol and because of time I browned the tops on a dry griddle on the stove but it still turned out quite lovely and my boys took it with cheese in between for sandwiches today :-). Thanks for the recipe :-) (ps. I used my homemade yoghurt which is almost a cross between yoghurt and sour cream and it was awesome)

  2. Excellent! I subbed Tofutti Better Than Sour Cream for the yogurt to make this vegan, and added some roasted garlic. I cooked the naan on the grill (2-3 minutes first side, about 1 minute second side). It turned out beautifully!

  3. I was skeptical about interrupting my bread machine after 10 minutes, but I must say the end result was delicious! I used sour cream instead of yogurt and added a few sesame seeds to the top prior to baking. I think I'll flatten it a bit more next time - and there certainly will be a next time! FYI - my machine has a loaf size selection & I used 2 lb which seemed to work fine. I did have to add another Tbs of water right away. My first time making naan & this recipe was perfect!

Hi .. The pic is of my beautiful son, born on 2/5/2005. His name is Tariq, meaning Bright Star. As I type this, he is blowing bubbles in his water cup and watching cartoons. He whined to get this water for 15 mins and now he won't drink it, he will only play with it. Sigh..A few days ago he came up with this song, so sing along to the tune of "Old McDonald" :Old McTariqLaq Laq LaqE I E I OOOOOOLOL I thought it was the cutest thing :-)When I'm not running around after my son, or cleaning up the mess he makes wherever he goes, I cook and bake (my husband loves the blueberry muffins I make) and I love trying new recipes ..I also love to read, and collect sci-fi/fantasy novels .. I have over 500 books and still counting ..

FAQs

Is yeast or baking powder better for naan? ›

It wasn't a bad taste, but it was noticeable. I also found the baking soda doughs burned more easily. The baking powder-yeast dough compared to the yeast-only dough were nearly identical — similar air bubbles in the pan, similar dough texture, similar flavor — so, in the end, I stuck with yeast alone as a leaven.

Why do you put yogurt in naan bread? ›

Plain yogurt gives the dough a pillowy, stretchy crumb, and cooking it over high heat gives naan bread its signature glossy, blistered surface, which is finished by brushing with ghee or butter.

Why is my naan bread not fluffy? ›

Naan doesn't get bubbles – Pan not hot enough, dough not moist enough or improper leavening. Naan turns hard – Toasting for too long, not enough moisture in the dough, toasting on low heat or not kneading the dough enough.

Why isn't my naan bread puffing up? ›

You need a high enough heat for the baking powder to start reacting and producing gases, and also for the water content in the dough to transform into steam – both of which contribute to the puffing action and bubble formation. If your heat is too low, the naan bread will dry out before bubbles start forming.

What happens if you use baking powder instead of yeast for bread? ›

In baked goods, you can replace yeast with an equal amount of baking powder. Just keep in mind that the leavening effects of baking powder will not be as distinct as those of yeast. Baking powder causes baked goods to rise rapidly, but not to the same extent as yeast.

What happens if you use yeast instead of baking powder? ›

It can be inconvenient to wait for yeast products to rise but there are two very important benefits: 1) Yeast will keep producing CO2 as long as there are sugars to eat- this means that you can raise tougher doughs- like bread dough- where baking powder just wouldn't have enough lift. 2) Flavor. This is the big one.

Why do you sprinkle water on naan bread? ›

you put it on naans to keep them soft.

Can I use Greek yogurt instead of plain yogurt in naan? ›

You can use a 2% or fat-free Greek yogurt, your bread may just not be as pillowy soft. Olive oil. Canola or avocado oil can be used in place of olive oil. Baking powder.

How healthy is naan bread? ›

While it may contain more carbs and sugars, it earns its reputation as a healthy alternative with its relatively generous amounts of protein and fiber. Despite its high carb content, naan can be considered a more nutrient-dense alternative to white bread and pita.

What does naan mean in English? ›

: a round flat leavened bread especially of the Indian subcontinent.

What ingredient makes bread more fluffy? ›

Add Sugar

Adding sugar weakens the gluten structure, absorbs water, and eventually makes the bread lighter and softer. As a result, sugar improves the bread's taste, structure and texture. Yeast also eats up sugar to produce carbon dioxide, which raises the dough and makes bread fluffy.

How do you make naan dough rise faster? ›

Set the bowl of dough in the microwave and shut the door.

Leave the glass of water in the microwave with the dough. The glass of water and the heat from the microwave will create a warm, moist environment that will help the dough rise faster.

What are the black dots in naan bread? ›

Its just the heat that creats the black spots after been cooked. Yeah, if its stale and you find those spots its a big no no. otherwise its only the heat that makes roti naan paratha etc indian bread look like black or brown or red spots on these edibles. Completely edible …

Why is naan bread expensive? ›

Usually smaller in size. Naan on the other hand is an Indian flat bread made out of refined wheat flour (maida). Cooked in a tandoor without any oil and is smeared with butter. Naan might cost more due to the operational cost for a Tandoor.

Can I leave naan dough to rise overnight? ›

Make the dough up to the end of Step 5 – Proof 1. Then after the dough has doubled in size, put the bowl with the dough it in the fridge overnight (I've done 24 hours). Do not punch dough down or touch it – just put it in as is. The fridge stops the dough from rising any further.

Should I use yeast or baking powder for bread? ›

Without gluten, the CO2 bubbles in bread would be lost, resulting in a much denser loaf. Whether in the form of active dry yeast or homemade starter, yeast is essential for bread to rise, not only because of the CO2 that is produced but also by way of alcohol.

Should I use yeast or baking powder? ›

These baked items benefit from the fermentation process yeast undergoes during the proofing process. By comparison, you should use baking powder for baked goods that won't benefit from the taste of fermentation, such as banana bread, cookies, and cakes.

Which is better yeast or baking powder? ›

Baking powder will rise by itself because it contains acids, usually a quick combining and a slower combining to maximize the amount of time it bubbles. Even then you should get your bread in the oven as quickly as possible. Yeast bread is used with dough and quick breads (baking powder recipes) are batter breads.

Does authentic naan have yeast? ›

Though they're flatbreads, naans traditionally get their bubbly texture from yeast (and, very traditionally, from wild yeasts). Some more modern variations, such as that in Vivek Singh's Curry, use baking powder instead, with Jaffrey also adding extra bicarbonate of soda.
