If you love smoked ribs, you’re going to be obsessed with our homemade McRib recipe.

Imagine the most juicy, fall off of the bone ribs, but in sandwich form.

That’s what we were aiming for when making this homemade McRib recipe.

What is the McRib Made of?

Word on the street is that the McRib meat from McDonalds McRib sandwich doesn’t actually use much (if any) rib meat…

The McDonald’s McRib actually uses ground up pork shoulder with seasonings to create a patty that is shaped to look like a rack of ribs.

That doesn’t sound super appealing to us, so for our McRib copycat recipe we’re making our version the way we think it should be made.

With actual pork ribs!

McRib Ingredients

Instead of using ground up pork shoulder like the McDonald’s McRib, we are starting with a full rack of ribs!

For this recipe we opted to reach for Omaha Steaks St. Louis style spare ribs because we thought the larger bones would be easier to remove.

Also if we’re going to make the highest-quality McRib, obviously we reached for the highest-quality meat.

These Omaha Steaks ribs are competition-grade pork ribs so they’re even better than what you might find at your local market.

We also love that these are straight boned ribs, which makes it even easier to remove the bones for this McRib sandwich.

Baby back pork ribs could also work for this McRib recipe, but we haven’t tried to pull this off with baby back ribs quite yet.

In addition to a good pork rub and tasty BBQ sauce, all you need is a hoagie roll, sliced dill pickles and sliced white onion.

McRib Sandwich Recipe

Prep time: 7 Minutes

Cook time: 4 Hours

Serves: 4

Ingredients:

  • 1 rack of Omaha Steaks pork spare ribs (they come sliced in half)
  • ¼ cup of pork rub (try our homemade pork rib rub recipe)
  • ½ cup brown sugar
  • 1 cup apple juice
  • ½ cup of BBQ Sauce
  • 4 hoagie submarine rolls
  • ¼ cup of pickles
  • ¼ cup of sliced white onions

Directions:

  1. Start by preheating your smoker to 225 degrees.
  2. Remove the thin membrane from the bottom of the ribs. It helps to use a butter knife to lift the membrane and then use your hands to pull it off in one sheet.
  3. Generously cover the pork meat in your rib rub.
  4. Place the ribs on the smoker, bone side down and smoke for 3 hours.
  5. Then, whisk together the brown sugar with the apple juice in an aluminum baking pan. Remove the ribs from the grill and add them to the baking pan. Then top with aluminum foil.
  6. Place the baking dish back on the smoker and cook for another 30-45 minutes. This will help to steam the ribs to make them even more fall-off-the-bone. Test the ribs to see if the bone is easily removable from the rib meat. If so, it’s ready for sauce! If not, continue to steam the ribs until the bone can be easily removed.
  7. Finally, remove the bones from the rib meat and place the rib meat back on the grill and top with BBQ sauce and cook for another 20-30 minutes to integrate the BBQ sauce with the meat.
  8. Remove the ribs from the grill and slice the meat in half.
  9. Place the rib meat on the submarine hoagie rolls and add the pickles and onions.
  10. Add more BBQ sauce, if desired.

Note: While you have already removed the bones, still be careful for small cartilage pieces that may still be on the edge of the rib meat.
