Making chicken wings in the oven is easy, almost fuss-free and most importantly way healthier than deep-frying them in oil.

They can be cooked on a baking tray or on a wire rack plus finished off under a broiler for crispy skin, if desired.

Coated in a mixture of butter, garlic, parmesan and parsley, these are an appetizer perfect for any gathering from Game Night, Friday Night-In, to Superbowl, potluck or anytime you feel like it!

Bite-size celery sticks – the perfect companion to any kind of wings as they balance of the “heaviness” (especially when making deep-fried chicken wings).

French baguette – I am a bread person so we always have some kind of a crusty bread or roll to go with this appetizer

Useful tips how to make perfect chicken wings and possible variations

  • If using whole chicken wings, they will have to be divided into drumettes and wingettes (flats).You will also need more than 2 pounds as you will discard the tips (Pro Tip: freeze and use them for homemade chicken stock).
  • The quantity of salt works well when the recipe is followed to a T and no changes are applied. Your wings should be seasoned well. If you wanted to use salted butter or add more parmesan, please remember that this all would increase the sodium levels and could make these garlic parmesan wings way too salty.
  • If you are trying to monitor your sodium intake, you could under-season the wings or use no salt at all. The sauce will give the wings more flavor which can be plenty for you.
  • Regular paprika can be substituted with smoked paprika.
  • Cayenne pepper is a great add-on so if you are after a spicy kick, add as much/little as you like.

Ingredients

  • 2 pounds chicken wings , drumettes and wingettes only (900 grams)
  • 1.5 teaspoon salt , or to taste
  • black pepper , to taste, see note 1
  • ½ stick unsalted butter , melted , see note 2
  • 4 garlic cloves , pressed, see note 3
  • 1 teaspoon paprika , see note 4
  • 2 teaspoons dried parsley
  • ¼ cup parmesan powder , or finely grated parmesan, see note 5

Instructions

  • Preheat oven to 400 Fahrenheit (200 Celsius).

  • Line a baking tray with baking parchment. Place the wings onto the tray in a single layer. Season each with salt and pepper on both sides.

  • Bake on a upper or middle rack for 20 minutes, then take them out, turn each one of them over and bake for a further 20 minutes or until ready.

  • Meanwhile, melt butter in a small saucepan over low heat. Add pressed garlic and stir until fragrant, about 1-2 minutes. Pour into a mixing bowl (if yours is not heat-proof, wait until the butter mixture cools down a bit), add paprika, parsley and parmesan. Mix until well combined and set aside.

  • When the wings are done, transfer them into the mixing bowl and using kitchen tongs, toss them around so each of them is well coated in the mixture.

  • Sprinkle with more parmesan (optional) and serve with anything you like (see note 6)!

Notes

  1. I like to use a generous amount on each wing, but this will depend on your liking.
  2. By using unsalted butter you can control the sodium levels yourself and use only as little salt as you like. If you use salted butter, I highly recommend using less salt to season the wings to avoid over-seasoning.
  3. If you don’t have a garlic press, use a fine cheese grater to grate it.
  4. Either regular or smoked paprika can be used.
  5. Parmesan can be substituted with Grana Padano or Pecorino. With Pecorino, use less salt to season the chicken as this cheese is way saltier than Parmesan or Padano.
  6. Cooking time may vary, depending on the size of your oven, the rack you put them in as well as the size of chicken wings.
