Another day, another Instant Pot recipe! I think it’s safe to say the Instant Pot is my favorite kitchen appliance. And I also think it’s safe to say that I have a pretty well rounded arsenal of recipes made in it.

I have chicken, pork and beef recipes, recipes for pastas and recipes for soup. I think the only thing I’m missing is an Instant Pot dessert. Maybe that will be my next venture!

I made this Chicken Cacciatore Instant Pot recipefor dinner one day last week. I had a whole chicken in the refrigerator that needed to be used up, and an onion that

How to make Instant Pot Chicken Cacciatore

Start by turning your Instant Pot to SAUTE- High. Once the display reads HOT, add the olive oil to the inner pot, along with the onions. Sauté the onions until they are soft and translucent, then add in the garlic. Cook for another 1-2 minutes, then remove from pot and set aside.

Now onto the chicken. Some people might prefer an Instant Pot chicken breast cacciatore or prefer to just use chicken thighs, but I chose to use a whole chicken. I like the flavor that all of the chicken pieces add to the dish.

Season the chicken with salt and black pepper, then add half the chicken pieces to the pot to sear. Cook for 4-5 minutes per side, then remove from the pot and repeat with the remaining chicken.

Next you need to deglaze the inner pot with the win. Use a wooden spoon to scrape any browned bits off the bottom of the pot. Place the chicken back into the pot, top with sautéed onions and garlic, diced tomatoes, tomato sauce and spices.

Now let the Instant Pot do the rest of the work! Lock the lid into place and ensure the release valve is set to SEAL. Hit CANCEL, then MANUAL. Set the timer for 25 minutes.

When the timer has finished, allow it to naturally release for at least 10 minutes, then quick release the remaining pressure.

FAQs

Why is my chicken breast rubbery in Instant Pot? ›

If your boneless chicken breast winds up with a weird, rubbery texture, it probably means that you need to cook it longer. In general, the Instant Pot does better with longer cook times for meat.

Can you overcook chicken in the Instapot? ›

While all cuts of chicken are fair game for the Instant Pot, thighs are the most forgiving. Because chicken breast is so lean, just a couple of extra minutes of cook time turns them from juicy to overcooked and dry.

Is chicken cacciatore better the second day? ›

PRO Tip: Like many stews, this comforting chicken cacciatore is a dish that is better on the second day. Cook as directed, then cool and transfer the cacciatore to an airtight container and hold it overnight in the refrigerator. Reheat it gently the following day.

Does pressure cooked chicken make it tender? ›

By placing cooking liquid in the bottom of the pressure cooker and placing the chicken in the steamer basket above the liquid, you are guaranteed tender, moist chicken every time.

Why is my chicken tough after pressure cooking? ›

Maybe the pressure build-up inside wasn't enough for the chicken. Maybe you didn't really cook it long enough. Maybe you released the pressure too soon, without allowing it to cook completely. Maybe there's something wrong with your pressure cooker.

Does chicken get more tender the longer you cook it? ›

Unlike chicken breasts, chicken thighs and drumsticks actually become more tender the longer they cook. That's because of their makeup. Dark meat has an abundant amount of connective tissue, which dissolves into gelatin as the meat cooks, rendering it juicy and tender.

Is it bad to pressure cook too long? ›

Unfortunately, once you overcook a piece of meat in the pressure cooker, there's no going back. You'll be left with a pile of dry, crunchy, tasteless fibers and no amount of additional pressure cooking is going to put that moisture back into the meat. Earlier, I explained how ingredient size affects the cooking time.

How do you know when pressure cooked chicken is done? ›

Open the pot, then use a digital thermometer to check the thickest part of a piece of chicken—it should be at least 165oF.

What do Italians eat with Cacciatore? ›

Tender, succulent chicken pieces are cooked in this robust tomato sauce in this easy Italian classic poultry dish. Serve alongside Garlic Mashed Potatoes, or on a bed of Soft Polenta along with a sautéed green vegetable such as Broccoli Rabe Or Spinach.

What is chicken cacciatore sauce made of? ›

Aside from the chicken, the basic ingredients in chicken cacciatore are: onions, herbs, tomatoes and sometimes mushrooms. Some variations will call for carrots and celery, while others call for bell peppers or other vegetables. Some even flavor the tomato sauce with anchovies, which I haven't tried yet.

How do you fix rubbery chicken breast? ›

You can't go back and re-make the chicken, but the good news is there are ways to fix it. You'll need to add more liquid and fat back to help the chicken become more tender and enjoyable. My favorite way to save and serve rubbery chicken is by shredding it and adding some sort of liquid and fat back in.

Why is my chicken breast tough and chewy? ›

Overcooking or cooking at too high a temperature can result in tough, dry chicken. Undercooking can leave chicken undercooked and chewy. Proper cooking techniques, such as roasting, grilling, or braising, can help maintain moisture and tenderness.

How do you make chicken not rubbery and tender? ›

Brines and marinades help tenderize the meat by bringing more moisture in the protein. With that extra moisture, you lose less when you cook. The simplest way to do this is with a dry brine — unwrap the chicken breasts, salt them on both sides and let them sit in the fridge for at least an hour.

Why does my chicken breast have a weird texture? ›

Scientists are still working on finding the root cause of woody chicken breasts. But based on her research, Owens believes woody breasts are related to the development of the muscle. "If birds are growing really efficiently and fast, they're synthesizing muscle and that adds stress.
