  • 8 ounces light cream cheese, slightly softened
  • 2 tablespoons fresh basil, snipped
  • 1 garlic clove, pressed
  • 6 (8 inch) sun-dried tomato tortillas
  • 6 romaine lettuce leaves
  • 34 cup mozzarella cheese, shredded
  • 12 cup pitted ripe olives, sliced
  • 12 cup roasted red pepper, diced
  • 12 cup water-packed artichoke hearts, chopped
  • 4 ounces salami
  • 4 ounces ham

directions

  • Mix cream cheese with the basil and garlic.
  • On each tortilla, spread about 2 tablespoons of this mixture on the tortillas to within 1/4 inch of the edge.
  • Layer with romaine, salami, ham, and cheese.
  • Next, layer on the olives, roasted red peppers, and artichoke hearts that you prefer.
  • Tightly roll up the tortilla and cut in half on the diagonal.
  • Enjoy!

    Anytime I make something twice in three days is an exceptional recipe. This is that kind of recipe. I made these for a simple dinner for Dugan and myself. He scarfed his and was looking suspiciously at mine so I just pulled everything out of the fridge and made him another. The second one I browned in olive oil and he really went carniverous over that one. He ate until I was sure he was going to explode. He barely had the strength to crawl back to his La-Z-Boy recliner and watch ESPN. I made them AGAIN on Sunday for Dugan's poker party. I fried them and cut them into fourths. The boys loved them and wanted more but I didn't have enough ingredients to make another batch so I have promised to make them again next month. I'm making myself one for lunch today. (I said I didn't have enough ingredients for THEM- I didn't say I didn't have enough for ME) LOL.

    Fabulous! Was in a hurry so used light cream cheese and then, instead of the basil and garlic clove, drizzled a bit of Italian salad dressing on the cream cheese and spread it over the tortilla. Used everything else in the recipe and WOW -- this one's delicious. The fact that it can be made ahead makes it extra special!

    So delicious! I used turkey instead of ham and used turkey pepperoni instead of salami for a lighter, healthier fare. We absolutely loved these. Next time, I will grill it as another reviewer mentioned. Thanks for this wonderful recipe.

    Excellent sandwich! I will be making this again. The only thing I'll do differently next time is remove the ribs from the romaine lettuce -- I think that would make it easier to roll the wrap.

    I made this for a girls night in last night and they were fabulous! I switched out the roasted red pepper for sun dried tomatoes because that is what I had on hand. Also, had artichokes in oil instead of water, but it worked out fine. Will definitely make these again and the girls took the recipe home with them!

    This was a nice, quick dinner on a night that was just too hot to cook. I subbed a dried herb seasoning for the basil and garlic and left out the red peppers and artichokes, but I still feel like we got the main tastes of the recipe. Tasty, healthy and quick...this will certainly be a meal that will make a return appearance at our dinner table...thanks Lori!

Hey there! I am the wife of my dh, Steve, to whom I've been married a very short 12yrs. I am also the SAHM of three boys (11yo and 4yo at home, 23yo on his own). I have a extensive collection of cookbooks, but have found that Zaar has taken care of my appetite for any hands on cookbooks. I just love to bake, especially for the high school football team here during the fall. It is my favorite time of the year......sweaters, bonfires, leaves, pumpkins, caramel apples, football, all the stuff about fall is fun!
